This recipe is actually a Tik Tok trend one of our teens saw and wanted to act out in the kitchen. We all know that if a teenager wants to spend some time with you, you jump at the opportunity! Gretchen and her oldest son really enjoyed making this quick and easy recipe together, although they had even more fun eating it. These rice cakes combine the perfect amount of sweet (she used Cinnamon Almond Butter for this iteration) and salty (the rice cakes and a bit of salt sprinkled on top). They also provide a treat without any guilt as you are getting some protein and complex carbs from the rice cakes. It's a win all around!
1 package lightly salted brown rice cakes
1 T. cinnamon almond butter (or another nut butter of your choice)
2 T. semi-sweet chocolate chips
1/4 t. coconut oil
Coarse Sea Salt
Spread almond butter on top of the salted rice cakes
Melt coconut oil and chocolate chips in the microwave (or on stovetop)
Spread melted chocolate on top of almond butter and sprinkle with coarse sea salt
Freeze for at least 30 mins. or until the chocolate has set.
