Gretchen's mom has been serving this easy holiday salad on Christmas Eve for years. It is always a loved accompaniment to any meal you are serving. It is so versatile from a side salad with fish, steak or even or favorite chili. Want to make it a meal in itself? We love this salad with pulled rotisserie chicken. Enjoy!
• 1 head romaine lettuce, torn (we prefer using the hearts) • 1 head butter lettuce • 1/4 cup pomegranate seeds • 1/4 cup toasted pine nuts • 1/2 cup feta cheese • 1/3 cup olive oil
• 1 T. red wine vinegar
• 2 T. maple syrup
• 1 t. dijon mustard
• 1/2 t. oregano
• salt + pepper
1. Toss romaine lettuce and butter lettuce together in a large bowl.
2. Add pomegranate seeds, pine nuts and feta. You can always measure with your heart...
3. Whisk olive oil, vinegar, maple syrup, mustard, oregano and s+p together and store in refrigerator until you're ready to serve. Toss with salad just before serving.
